COLOR Delicate, peachy-pink with shimmer

NOSE Intense with notes of grapefruit, pomegranate, blackcurrant, cotton candy, as well as hints of fern and rosemary.

PALATE The taste is fresh and full-bodied with a medium body, and the finish is underpinned by a pleasant and fresh sweetness and a hint of strawberry tart.

FOOD PAIRING Suitable as an aperitif and pairs well with salads with dressing, vegetarian appetizers, pizzas, spicy Asian cuisine, or chicken.

VINEYARDS The Pinot Noir vineyards are in the village of Dragoevo, Veliki Preslav Municipality. The Rubin and Merlot are from the Veliko Tarnovo region.

VINIFICATION The Pinot Noir harvest was at the end of August 2023. The pressing was of whole clusters, without prior crushing. The must is clarified by cold and subsequently, fermentation takes place at a low temperature – 13-14°C. The wine is clarified and statically stabilized. It is then blended with Rosé from Rubin and Merlot for greater complexity.
