PALATE The taste is fresh and full-bodied with a medium body, and the finish is underpinned by a pleasant and fresh sweetness and a memory of strawberry tart.

FOOD PAIRING Suitable as an aperitif and pairs well with salads with dressing, vegetarian appetizers, pizzas, spicy Asian cuisine or chicken.

VINEYARDS The Pinot Noir vineyards are in the village of Dragoevo, Veliki Preslav Municipality. The Rubin and Merlot are from the region of

Veliko Tarnovo.

VINIFICATION The Pinot Noir harvest was at the end of August 2023. Pressing is done on whole clusters, without prior crushing. The must is cold-clarified, and fermentation subsequently takes place at a low temperature – 13-14°C. The wine is clarified and statically stabilized. Subsequently, it is blended with rosé from Rubin and Merlot for greater complexity.
