FEATURES
Tasting notes: Pale yellow color with golden hues. The aroma is ethereal, with nuances of tropical citrus, ripe pear, and roasted hazelnut, complemented by subtle herbaceous and floral notes. The taste is balanced and fresh, with dominant elegance and delicate accents of tropical fruits, freshly baked croissant, and hazelnut cream. The finish is long, with gentle impressions of apricot and orange blossom.
Food pairing: Pairs ideally with light vegetable dishes such as artichokes and asparagus, delicate seafood – langoustines and crabs, as well as fine fish like pagrus, sea bream, or zander, prepared steamed, baked, or lightly sautéed. Also suitable for tender meats like rabbit.

Vineyards: Our own vineyards in the "Pripeka" and "Lozyata" areas in the land of the village of Yalovo. Chardonnay and Dimyat have a planting density of 653 vines per decare and a medium-stemmed formation, with Chardonnay pruned in double Guyot-Poussard and Dimyat in a three-arm goblet. Sauvignon Blanc has 555 vines per decare and a two-sided cordon Royat formation. Cultivated with respect for soil biodiversity, through green manuring and the use of natural products for phytosanitary protection, and without any synthetic pesticides.
Vinification: Each variety is vinified separately, with technology adapted to its character, and harvesting is done at different times to achieve optimal ripeness. Chardonnay ripens earliest and is harvested in the first days of September. It is pressed with whole bunches to preserve finesse and delicacy. Sauvignon Blanc is harvested around September 10, with destemming, crushing, and short maceration with the skins to extract aromatic potential. Dimyat, the latest ripening variety, is harvested in early October and is vinified with a two-day maceration with the skins, applying bioprotection and without added sulfites. The fermentation of all three varieties takes place in oak barrels, followed by aging on fine lees. The total time in the barrel is about 6 months. The blend consists of three barrels – one from each variety.
