The color is transparent, brilliant, ruby red. The aroma is dominated by notes of ripe blackberry, blackcurrant, tobacco leaf, vanilla, blueberry, and cocoa. The taste is harmonious, with a light to medium body, pleasant freshness, and serious depth. The finish is juicy, with a hint of blueberry and wild blackberry.
The wine is ready for consumption now but has great potential for aging in the bottle. With time, the bouquet will become nobler, retaining the fruity notes of blackberry and wild berries, which is characteristic of the Gamza variety.
FOOD PAIRING Thanks to its freshness, the wine would pair well with meat – pork chop, lamb for St. George's Day, veal medallions; as well as with vegetarian dishes like beans in a pot or mushroom risotto. It will also go well with fresh cheeses or soft cheeses with a rind like Camembert, Reblochon, or Munster.

VINEYARDS Gamza from our own vineyards, planted with the aim of reviving old varieties and traditional viticulture in the Veliko Tarnovo region. The planting is with narrow rows -1.7m, and the training and pruning are similar to those characteristic of our region from older times, but adapted for working in rows similar to regions like Sauternes or Saint-Émilion in France. In our vineyard work, we adhere to the principles of organic farming and maintain biodiversity in the soil and surrounding areas. In this spirit, a part of the planting material for the variety was taken from old plantations in the region to preserve local genetic diversity.
VINIFICATION The entire process was carried out in the spirit of the old school: fermentation is traditional, in an open vessel, with some of the grapes destemmed and some whole. The method of bioprotection and minimal doses of sulfites was used. After fermentation, the wine ages in French barrels for 14 months. Repeated racking after natural clarification replaced the need for using a filter.
