VINIFICATION The wine is produced by the method of "carbonic maceration," where whole, uncrushed grape clusters are placed in a vessel filled with carbon dioxide. The first part of the fermentation is due to the natural metabolism of the grape berry itself. After about seven days, the grapes are pressed and inoculated with yeast to complete the fermentation. Stabilization and clarification are done naturally by cold. No sulfites are added at any stage of this wine's production, and the small amount of sulfites present is due to yeast metabolism. No additives are used, with the exception of yeast starter, lactic acid bacteria, and yeast walls.
