VINEYARDS Old vineyards from the region of Dragoevo village, Veliki Preslav municipality.
VINIFICATION Part of the grapes were pressed as whole clusters, while another part was crushed and underwent a period of skin contact. Fermentation took place at 16-18°C in stainless steel tanks, and a portion of the wine fermented in 600-liter Bulgarian oak barrels. After fermentation, the wine was left on its fine lees with bâtonnage for 6 months. The wine underwent malolactic fermentation.
