FOOD PAIRING: Suitable as an aperitif and pairs well with fresh salads with dressing, vegetarian appetizers, chicken, trout, cheeses.
VINEYARDS We have selected several plots in the villages of Nauchene and Kamenovo (Novo Zagora region). The vineyards are over 30-40 years old, with a planting density of about 2800-3300 vines per decare. The harvest is done on a single day for both varieties.
VINIFICATION For the assemblage, we use both free-run and pressed must from both varieties together. The free-run must was drained after several hours of maceration in a dry ice environment, and then clarified by cold before fermentation. The skins were kept for 2 days before pressing, with the pressed must clarified separately and then the two fractions blended. Fermentation takes place in a stainless steel tank at 15-18°C. After the alcoholic fermentation is complete, the wines are clarified and cold stabilized.
