The free-run must was drained after several hours of maceration in a dry ice environment, and then clarified by cold before fermentation. The skins were kept for 2 days before pressing, with the pressed must clarified separately and then the two fractions blended. Fermentation takes place in a stainless steel tank at 15-18°C.
